In a large bowl, whisk the eggs with a fork or wire whisk until frothy. In a medium-sized bowl, stir together lupin flour, baking soda, xanthan gum, and salt. In a metal bowl, combine the yellow cake mix, eggs, and olive oil.
Cover and chill dough. (As per recipe below) Scoop dough onto prepared baking sheet.
